Preparing the Sprouted Topping
After they have completed sprouting, rinse one final time. In a skillet on low heat, add a Tbsp of olive oil. Then add your sprouted quinoa and black beans. Add seasonings and cook on low/med-low heat for 20 - 30 minutes (until bean texture is to your liking).
1/2 Tbsp chili powder
1 Tsp cumin
1 tsp coriander
1 tsp garlic
1 tsp oregano
1/2 tsp cilantro
1 happy memory
Sea salt and black pepper to your taste.
I've spent the past few months educating on the benefits of eating sprouted foods. I finally experimented with my own sprouting and recipes today. Here is the first one I created. We love Mexican foods at our house. I wasn't sure what I wanted to do with our sprouted black beans and quinoa, but I knew they would need to be used in a couple of days. I thought, why not make a little topping that could go on salads, nachos, tacos or casseroles.
First, you need to sprout the beans and quinoa. Here is a brief run-down of that process. I will do a more detailed one in the near future. I recommend using at least a quart size mason jar. For time saving tips, I recommend purchasing sprouting lids that go on your mason jars, but as you can see, I used coffee filters and it was just a bit more time consuming.
Sprouting Black Beans & Quinoa
In a quart size mason jar add half a cup of dried black beans. Add a cup of water (I used distilled or reverse osmosis) to the mason jar. Cover with a coffee filter and rubber band or metal ring (this is to allow air in, but not things floating around in the air). Sit in on a counter for 8-12 hours (away from direct sunlight).
You will do the same procedure in a separate jar with the quinoa, however, it will only sit for 5 hours.
Next, you will rinse and drain each jar 2-3 times. After the final rinse, replace the coffee filter and ring. Placing a towel under the lid end, tilt the jar so that it can drip out any excess water. (Picture 1). You will need to rinse and drain every 8 hours or at minimum twice a day. Returning it to the angled position each time. Both will take 1-3 days to sprout. I did 3 days and image 2 shows you what the quinoa looks like at that time.
